🧾 Ingredients (2 people)

  • 150 g lentils (uncooked, green/brown)
  • ½ cucumber
  • 2 tomatoes
  • ½ red onion
  • 50–75 g feta or goats' cheese
  • Hand fresh parsley

     

Dressing:

  • 3 tbsp extra virgin olive oil
  • Juice of ½ Citroën
  • 1 teen garlic (great)
  • Snuff salt + pepper

 🔪 Method

Boil the lentils

  • Rinse the lentils
  • Boil them for ± 20 minutes in water (without salt)
  • Drain and leave to cool slightly

👉 Important: they must soft but not mushy are

2. Cutting vegetables

  • Cucumber → diced
  • Tomato → diced
  • Red onion → very finely chop
  • Parsley → roughly chop


3. Dressing

Mix of:

  • olive oil
  • lemon juice
  • garlic
  • salt + pepper


4. Mengen

  • Put lentils in a bowl
  • Add vegetables
  • Pour dressing over it
  • Mix well


5. Finish

  • Crumble feta over the top
  • A bit more olive oil on top (optional)

  • 2 hands spinach
  • 1 courgette
  • 1 UI
  • 2 toes garlic
  • 750 ml stock (preferably homemade)
  • second-hand extra virgin olive oil
  • Salt + pepper

🔑 Optional (but strongly recommended)

  • ➕ piece ginger (anti-inflammatory)
  • ➕ half avocado (creaminess + healthy fats)
  • ➕ pinch turmeric

🔪 Method

  1. Chop onion, garlic and courgette
  2. Heat olive oil in pan
  3. Fry onion + garlic (2–3 min)
  4. Add courgette + broccoli
  5. Add the stock
  6. Simmer gently for 10–15 mins
  7. Add spinach (allow to wilt)
  8. Blend everything until smooth using a hand blender

  • 150 g quinoa

  • Lemon wedges
  • Salt + pepper

🔪 Method

  1. Preheat oven to 200°C
  2. Cook quinoa according to instructions on the packet
  3. Cut vegetables into pieces
  4. Mix vegetables with olive oil, garlic, salt and pepper
  5. Roast vegetables for approx. 20 mins in the oven
  6. Fry or grill the salmon (approx. 3–4 mins per side)
  7. Serve salmon on quinoa with vegetables on the side
  8. Squeeze lemon over it

  • Do not cook for too long → salmon must stay juicy

🔪 Method

  1. Preparation
    Slice the mushrooms, finely chop the onion and mince the garlic very finely. Whisk the eggs in a bowl with a splash of water/milk, salt and pepper.
  2. Roasting vegetables (important!)
    Heat olive oil over medium heat.
    • First fry the onion (2–3 mins)
    • Add the mushrooms and fry until golden brown (the moisture must evaporate)
    • Add garlic and spinach, fry briefly until the spinach wilts
  3. Pouring omelette
    Turn the heat down a bit. Distribute the vegetables evenly and pour the egg mixture over them.
  4. Let to cook gently
    Let the omelette set slowly (don't rush). Optionally put a lid on the pan for even cooking.
